  • 4 10-inch Flour tortillas
  • 1 lb Cooked shredded chicken
  • 2 ½ cups Shredded cheese
  • 1 cup Mild salsa
  • Guacamole or sour cream (Optional)


  • Heat a non-stick skillet over medium heat.
  • Place one tortilla in the skillet.
  • Sprinkle shredded cheese evenly over the tortilla.
  • Add a layer of cooked shredded chicken on top of the cheese.
  • Spoon salsa over the chicken.
  • If desired, add a dollop of guacamole or sour cream.
  • Top with another tortilla.
  • Cook until the bottom tortilla is golden and crispy, and the cheese is melted (about 3-4 minutes).
  • Carefully flip the quesadilla and cook until the other side is golden and crispy (about 2-3 minutes).
  • Remove from the skillet and let it cool slightly before slicing into wedges.
