Vegan Chocolate S’mores Mug Cake

Summer is just around the corner; what better way to celebrate than to try out this spin on a classic summertime s’more treat. This Vegan Chocolate S’mores Mug Cake is quick and easy to make and can satisfy your sweet tooth in 5 minutes!

To ensure that this recipe is vegan we used vegan marshmallows. The majority of marshmallows are made with gelatin, which is derived from animal collagen, however, vegan marshmallows like these are a great alternative for those following a vegan diet. 

But it’s not just the marshmallows that make this dessert vegan-friendly; the entire recipe is crafted without any animal products! Instead of traditional milk chocolate and graham crackers, we opted for dairy-free dark chocolate chips and vegan graham crackers. 

The beauty of this Vegan Chocolate S’mores Mug Cake lies in its simplicity and convenience. With just a handful of pantry staples and a microwave, you can whip up a decadent single-serving dessert in no time. This Vegan S’mores Chocolate Mug Cake Recipe is:

While this recipe is designed for a single serving indulgence, if you find yourself with leftovers, fear not! To preserve the freshness and flavor of your Vegan Chocolate S’mores Mug Cake, simply transfer it from the mug into an airtight container, like these stackable glass jars, and store it in the refrigerator for up to 2 days. When ready to enjoy again, gently reheat in the microwave for a few seconds until warm and gooey, and savor the deliciousness all over again.

Vegan Chocolate S’mores Mug Cake Recipe Variations and Substitutes:

Variations 

  • If you do not have coconut milk you can replace this with another plant based alternative. If you are not vegan you could use cows milk as well 
  • If you do not have coconut oil you could use vegan butter. If you are not vegan you could also use regular butter 
  • If you don’t like marshmallows or chocolate chips you can omit this step. 
  • Instead of cookies you could use granola (homemade or purchase)
  • Increase Fiber: top with berries or bananas to increase fiber content. 
  • Non vegan option: opt for regular milk chocolate, marshmallows, and graham crackers

Ingredients
  

  • 4 tbsp flour
  • ¼ tsp baking powder
  • 2 tbsp cocoa powder
  • 2 tbsp sugar
  • Pinch salt
  • 3 tbsp coconut milk (or plant based alternative)
  • 2 tbsp coconut oil melted
  • 1 tbsp dark chocolate chips
  • 1 tbsp vegan marshmallows
  • 1 crushed cookie of choice (such as vegan graham crackers)

Instructions
 

  • Add flour, baking powder, cocoa powder, sugar and salt to a mug or microwave safe dish.
  • Add coconut milk and melted coconut oil to the mug; mix well until fully combined.
  • Microwave the cake for 1 minute and 30 seconds (or until fully cooked)
  • Add marshmallows and chocolate chips on top of the cooked cake. Microwave for another 20 seconds.
  • Sprinkle the crushed cookie on top of the mug cake. ENJOY!
